Candy Cane Chocolate Mini Loaves

Having a bunch of leftover candy canes after the holidays inspired me to use them up by adding them to a chocolate bread. Coffee and cocoa intensify the flavor. —Shelly Platten, Amherst, Wisconsin

Ingredients:

1/4 cup butter, softened

1-2/3 cups packed brown sugar

4 large egg whites, room temperature

2 large eggs, room temperature

3/4 cup strong brewed coffee

1/2 cup vanilla yogurt

1/4 cup canola oil

1 tablespoon vanilla extract

1/4 teaspoon peppermint extract

3-1/2 cups all-purpose flour

3/4 cup baking coco...
